People either love Durian or hate it, but it seems more raw fooders like it than anyone else, and it just happens to be one of my favourite fruits. The best bit about this freeze dried durian is that it doesn't smell...
It can be eaten straight out of the pack as a tasty snack, crisp and crunchy...
or if you soak it, it becomes just like fresh durian again - break it into pieces and soak for 20 to 30 minutes.

The old packet suggested a recipe for a Durian Shake - durian, milk, vanilla ice cream and crushed ice. I converted this to a raw recipe by replacing the milk and ice cream with hemp milk (and I skipped the ice as it's winter) and it was delicious.
Nutrition: Durian is about 2% protein and has good amounts of vitamin C and minerals.

100g of dried durian is equivalent to 1kg of fresh fruit (which after seeds and shell is removed is around 2kg fruit). Freeze Dried Fruits are produced in a process where moisture is removed from the frozen product using a very low temperature and a vacuum.
