A traditional sauerkraut recipe flavoured with juniper berries. Sauerkraut (fermented cabbage) is full of nutrition, probiotic bacteria and flavour. It is a real superfood which I eat every day. You can mix it in to a salad or serve as a condiment with many different meals.
Dr Mercola ran lab tests which proved that sauerkraut has many times more beneficial probiotic bacteria than supplements. Probiotic bacteria help with digestion, and many other aspects of health - some experts recommend eating fermented foods with every meal.

Store in the fridge. Because the sauerkraut is raw (not pasteurised), it is still fermenting and sometimes causes liquid to seep out a little. This is normal and won't affect the quality of the sauerkraut. Storing in the fridge slows down/stops the natural fermentation process.
