This is an amazingly delicious honey from the rainforests of Zambia. The current batch has almost set. Sometimes crystallised bits form, which are delicious.
The bee keepers hang the hives high in the trees and leave them there for a few years to be filled with honey by wild bees. When the bee keepers harvest the honey, they always leave some for the bees.
This honey is raw and cold pressed from the frame. This means more of the natural pollen stays in the honey which gives some of the unique flavour of this honey compared to the conventional way of centrifugally extracting honey.
A fair trade product from village bee keepers. No GMOs for hundreds of miles.
Please note that this honey varies from jar to jar and batch to batch. It comes from various different bee keepers in different parts of the forest and some jars can be quite different, although it is always delicious!
